Ingredients
- 1 Cup Rice
- 1 Cup Pumpkin
- 1 Big Potato
- 1/2 Cup Onion
- 1 Tablespoon Crushed Ginger Garlic
- 1/2 Teaspoon Turmeric Powder
- 1 Teaspoon Coriander Powder
- 1 Teaspoon Red Chilli Powder
- Salt as per taste
- 1 Tomato
- Handful of Coriander Leaves
- 1/2 Cup Green Peas
- 1 Teaspoon Dry Fenugreek Leaves
- 4 Cup Vegetable Stock
For Tempering
- 1 Cinnamon stick
- 1 teaspoon Caraway seeds
- 5-6 Cloves
- 2 Green cardamom
- 1 Black Cardamom
- 1 Star anise
Instructions
- First, cut the pumpkin into large pieces and set them aside.
- Peel and cut the potatoes into large pieces, fry them until golden then set them aside.
- Now in a pot over medium heat add oil and whole spices,
- Once they start to sizzle add ginger and garlic and cook for a minute.
- Now, add the onion and cook until it turns slightly golden.
- Now add the pumpkin and cook for 2 minutes.
- Now add the pumpkin and cook for 2 minutes. now add turmeric powder, red chili powder, coriander powder, salt and little hot water, Cook everything for 2 minutes or until the spices are well cooked.
- Now, add the sliced tomatoes and a handful of coriander leaves. Mix everything well and cook until the tomatoes become soft.
- Now add the rice, vegetable stock, and green peas give everything a good mix and cook until all the water evaporates.
- Then sprinkle dry fenugreek leaves on top and add 1-2 table spoon ghee. Cover and cook on low heat for 12-13 minutes.
- Serve hot with your favorite side, dip or enjoy it on its own.
