Ingredients

  • 1 Cup Rice
  • 1 Cup Pumpkin
  • 1 Big Potato
  • 1/2 Cup Onion
  • 1 Tablespoon Crushed Ginger Garlic
  • 1/2 Teaspoon Turmeric Powder
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Red Chilli Powder
  • Salt as per taste
  • 1 Tomato
  • Handful of Coriander Leaves
  • 1/2 Cup Green Peas
  • 1 Teaspoon Dry Fenugreek Leaves
  • 4 Cup Vegetable Stock

For Tempering

  • 1 Cinnamon stick
  • 1 teaspoon Caraway seeds
  • 5-6 Cloves
  • 2 Green cardamom
  • 1 Black Cardamom
  • 1 Star anise

Instructions
 

  • First, cut the pumpkin into large pieces and set them aside.
  • Peel and cut the potatoes into large pieces, fry them until golden then set them aside.
  • Now in a pot over medium heat add oil and whole spices,
  • Once they start to sizzle add ginger and garlic and cook for a minute.
  • Now, add the onion and cook until it turns slightly golden.
  • Now add the pumpkin and cook for 2 minutes.
  • Now add the pumpkin and cook for 2 minutes. now add turmeric powder, red chili powder, coriander powder, salt and little hot water, Cook everything for 2 minutes or until the spices are well cooked.
  • Now, add the sliced tomatoes and a handful of coriander leaves. Mix everything well and cook until the tomatoes become soft.
  • Now add the rice, vegetable stock, and green peas give everything a good mix and cook until all the water evaporates.
  • Then sprinkle dry fenugreek leaves on top and add 1-2 table spoon ghee. Cover and cook on low heat for 12-13 minutes.
  • Serve hot with your favorite side, dip or enjoy it on its own.
