Ingredients

  • 1 cup Chopped Spinach
  • 1 cup Chickpea Flour(Besan)
  • 2 tbsn Cashew flour
  • 1/4 cup Yoghurt
  • 1 tspn Baking Powder
  • 1 tbsn Olive Oil
  • 1/4 tspn Salt

Instructions
 

  • Chop spinach into small pieces.
  • In a big bowl add chickpea flour, salt, baking powder, cashew flour, yoghurt, olive oil and spinach. Mix everything well and knead it into a soft, smooth dough.
  • Divide it into equal portions using your hands or a dough cutter, take a small portion and roll it into a ball.
  • Then gently press it and make a small hole in the centre to give it a bagel shape. Repeat the same for the rest of the dough. You can lightly oil your hands to stop the dough from sticking.
  • Before placing the bagels in the oven, brush a little butter on top of each one. This will help keep them moist and add a nice golden finish.
  • Place the shaped bagels on a baking tray lined with parchment paper. Bake them in a preheated oven at 200°C (390°F) for 20–25 minutes, or until they turn golden and firm on the outside. Let them cool for a few minutes before serving.
