I am someone who loves cooking but sometimes I just don’t feel like doing it. Still that’s not really an option when you have a family or even if you live alone and are used to eating home cooked meals. This Hainanese Chicken Rice is perfect for those days. It’s not just simple and easy to make with only a few ingredients but it’s also super delicious and leaves very little mess behind.

Why I Like This Recipe
If you love food that’s not too spicy this recipe will be a big hit. The rice has a very mild flavour and the chicken turns out soft and juicy. You can really taste the green onion topping in every bite. If you’re not a fan of green onions just skip them. But if you love them like I do you’ll fall in love with this recipe again and again.
Even my 5-year-old who prefers mild food with no strong spices not only liked it but also appreciated it so that’s a big thumbs up from her! I’ll definitely be making this one more often.

1 Pot Hainanese Chicken Rice – So Easy and So Good!

Ingredients
- 4 skinless chicken thighs
- 1 cup washed rice
- 1 tbsn crushed ginger garlic
- 2 cup chicken broth
- salt and pepper
- julian ginger
- 3-4 green onion
- oil
scallion oil
- 1 cup chopped green onion
- 1/2 cup oil
- salt for taste
Instructions
- In a bowl marinate the chicken with salt and pepper, Mix well and keep aside.
- Now in a pot add oil and crushed ginger garlic.
- Sauté for a minute then add rice and sauté for 1-2 minutes more.
- Add chicken broth, sliced ginger and salt, Place the chicken pieces and turn the heat to medium let it come to a boil.
- Once about 90% of the water is absorbed add green onion on top and cover the pot.
- Cook for 15 minutes then turn off the heat and let it rest for another 10 minutes without opening the lid.
- Place the chopped scallions in a heatproof bowl.
- In a pan, heat 1/2 cup oil on medium heat. Once hot pour it over the chopped scallions, add salt and mix well.
