Cashew Chicken Curry: A Recipe Straight from the Heart
This white chicken gravy is so special to me and it’s also very simple to make. This recipe doesn’t need too many spices just a few ingredients like ginger, garlic, onion, yogurt, coriander leaves and cashews. And in this recipe the magic comes from cardamom powder. I made this one a little dry but if you want you can make it with gravy and enjoy it with plain paratha, naan, or lachchha paratha, Uff! I can’t tell you how mouthwatering this is.
Ok let me tell you a very special compliment my father gave me when I prepared this recipe last time, 2 years ago when I visited India. My mother is an amazing cook and obviously my first teacher but papa is just different. He cooks with his own style and also taught me a few amazing tricks about cooking. After retirement he has lots of time so he became really passionate about cooking. Sometimes he used to call me to ask about recipe steps.
You will not believe it but the kitchen is his only, maa feels a bit left out sometimes 😄 but she’s happy because he doesn’t need to think about dinner or lunch because papa takes that job with passion. Now whenever we go to our house, he takes charge and starts showing his amazing chef skills. Trust me every time he creates magic and we hardly get a chance to cook when we visit. Just tell him what you want to eat and voilà you will be surprised.
So continuing with my last visit: my parents love my cooking. One day he said, “Today you cook” I am going to the market to bring chicken but I don’t want to eat rice something delicious, simple and fast So I made this cashew chicken gravy. I can’t tell you about his face when he first took a bite.
He didn’t say anything, I thought as usual it’s good but Maa said, “It’s so good” and my sisters were also saying, This chicken is good, give me the recipe. But he didn’t say anything. Once he finished I finally asked, “You didn’t like it?” And he smiled and said “You should think about your own restaurant I’ll invest in it.” I was like seriously? And he said yes! “Now you cook better than us.” I still remember his words and whenever I make this recipe and eat it no matter how far he is from me, his words give an extra blush to my face.

Do you like feeling rushed while cooking? Probably not. You need to prep your ingredients before you turn on the stove. I highly recommend soaking your cashews early so they blend into a super smooth paste.

Whaite Gravy Cashew Chicken Curry

Ingredients
- 500 gm Chicken Breast
- 1 Big size Onion
- Thumb size Ginger
- 5-6 Pods Garlic
- 1/4 Cup Cashew
- 100 gm Yoghurt
- 6-7 Raw Green Chilli
- 1 tspn Dry Fenugreek Leaves
- 3/4 tspn Cardamom Powder
- 1/2 tspn Black Pepper Powder
- Salt
- Cooking Oil
- Handful of Chopped Coriander Leaves
Instructions
- Start by cutting the chicken into bite-sized cubes not too big or too small.
- Roughly chop the onion, ginger and garlic then blend them into a fine paste.
- I used one onion: half for the ginger-garlic paste and half blended separately.
- Soak the cashews in water for 30 minutes then blend them into a fine paste.
- In a bowl marinate the chicken with the onion paste, yogurt, salt and pepper.
- Cover and let it rest for 6–7 hours or for a quicker method 30 minutes in the freezer.
- In a pot add butter and oil then temper with cloves and a cinnamon stick.
- Add the onion paste and cook until golden, sprinkle little water as it helps to cook.
- Add sugar as it caramelizes faster then add the marinated chicken and mix well.
- Now cover and cook until the oil separates around the edges. Stir occasionally to prevent sticking.
- This process takes 20–25 minutes on medium-low heat, the chicken will be tender and melt in your mouth.
- Now add pepper and cardamom powder, mix gently and cover for two more minutes.
- Add the cashew paste, whole green chilli and dried fenugreek leaves and mix well.
- Cover and cook for 2 more minutes, add chopped coriander leaves, mix well and yes! it’s done.
