Chicken Thai Glass Noodles (Inspired Pad Woon Sen)

Ingredients
- 300 gm Glass Noodles
- 2 Chicken Thigh
- 7-8 Bok choy
- 1 tbsp Soy Sauce
- 2 Eggs
- 1/4 Cup Sliced Onion
- 2-3 Pods Chopped Garlic
- Salt & Pepper
- Oil for Cooking
Sauce Mix
- 1 tbsp Oyster Sauce
- 2 tbsp Light Soy Sauce
- 1 tspn Fish Sauce
- 1 tbsp Oil
- 1 tspn Sugar
- 1/8 tspn White Pepper
Instructions
- Start by cutting the chicken thigh into thin slices. Marinate with soy sauce, salt and pepper then set aside.
- In a bowl beat the eggs with salt and pepper, and set aside.
- In a bowl add oyster sauce, soy sauce, fish sauce, oil, sugar and white pepper, Mix well to prepare the sauce and set aside.
- In the same wok add oil along with onion and marinated chicken, let it cook for 2-3 or until chicken become soft.
- Now add chopped garlic and bokchoy, on one side add little oil and pour the beaten eggs.
- Let the egg cook and scramble then add the noodles along with the prepared sauce.
- Gently mix everything, adjust the seasoning as needed and yes its ready.
