Sugar Free Banana Blueberry Bread

Ingredients
- 1 Overripe Banana
- 1/4 Cup Olive Oil
- 28 gm Monk Fruit Sweetener
- 3 Eggs
- 1 tspn Vanilla Extract
- 1 Cup Oats Flour
- 1/2 Cup Chestnut Flour
- 1/4 Cup Almond meal
- 2 tbsp Almond meal for topping
- 1 tspn Baking Soda
- 1 tbsp Psyllium Husk
- 1/4 tspn Salt
- 1 tspn Cinnamon Powder
- 1 Cup Blueberry
- 1 tbsp Coffee mixed in hot water
Instructions
- In a bowl add all the dry ingredients and combine well then keep it aside.
- In a bowl mash banana, add eggs beat until frothy then add all the liquid ingredients.
- Now add the dry mixture to the wet mixture and mix everything well.
- Add blueberries and give it a final mix but do not overmix.
- Pour the batter into the prepared bread tin lined with parchment paper.
- Sprinkle the almond meal evenly across the top.
- Bake for 40–45 minutes in a preheated oven at 350°F, To check if it’s done insert a toothpick into the centre.
