No-Meat Soya Taco

Ingredients
Avocado Mint Spread:
- Handful of Coriander Leaves
- Mint Leaves
- 1 Avocado
- Roasted Cumin Powder
- 2 Pod Garlic
- 1/2 Inch Ginger
- 4 Fresh Chilli
- Lemon Juice
- Salt
Homemade Tortilla:
- 3/4 Cup Wheat Flour
- 1/4 Cup Black Cheakpea Flour
- Salt
- 2 tbsp Butter
- 1/4 tspn Baking Powder
- Warm Water as needed
For Soya Filling
- 1 Cup Soya Chunks
- 3-4 Cup Vegetable Stock
- 1 tspn Red Chilli Powder
- 1 tspn Paprika
- 1 tspn Garlic Powder
- 1 tspn Onion Powder
- 2 tspn Sichuan Lemon Powder
- 2 tspn Roasted Cumin Powder
- 1 tspn Coriander Powder
- 1/2 tspn Brown Sugar
- 1 tbsp Dry Fenugreek Leaves
- Salt & Pepper
- Lemon
- Oil
Instructions
- For spread add everything in blender and make a smooth paste. Adjust the quantity of seasoning as per taste.
- For tortilla add all the dry ingredients then add water slowly to make a firm dough.
- Now on a flat surface knead the dough well for 2 min to make it smooth and firm.
- Cut the dough into equal-sized portions then roll them into small tortillas.
- Heat the pan on medium low heat and place the tortilla on it then cook it from both sides.
- In a pan add vegetable stock and bring it to a boil now add soya chunks and cover for 10–12 minutes.
- Now strain all the water from the soya chunks using a sieve, Make sure they are completely dry.
- Heat a pan and add oil and soya chunks, Roast them for 2–3 minutes until they change color.
- Now add all the spices along with salt and pepper then cook until everything is well combined with the soya.
- Finally add fenugreek leaves and cook for a few more minutes until it looks dry and well combined.
- On tortilla spread the sauce, Soya filling along with your favorite greens or chopped salad and lemon juice on top.
