These crispy coconut tea biscuits are so good, easy to make and definitely one is not enough. The ingredients are just a few regular baking ingredients along with desiccated coconut. I love coconut in every form like coconut water, coconut milk, coconut ice cream or just fresh coconut on its own.

In India coconut is very important not only in cooking but also in Hindu religious traditions. No festive season feels complete without coconut. Whether it’s a festival or something auspicious we always offer sweets, flowers and coconut to God. Prasad may change from state to state because every region follows its own rituals but one thing common everywhere is coconut.

You can easily find small vendors selling fresh coconut slices and people truly love it. Coconut with ramdana was one of favorite snacks during my childhood. I don’t know about Gen Z but during my childhood, me and my friends really loved eating coconut with ramdana together.

Ingredients

  • 250 gm All Purpose Flour
  • 110 gm Desiccated Coconut
  • 165 gm Butter
  • 110 gm Icing Sugar
  • 40 gm Sugar
  • 20 gm Cornflour
  • 4 tbsp Milk
  • 10 gm Milk Powder
  • 1 tspn Vanilla Essence
  • 1/2 tspn Baking Powder
  • 1/2 tspn Cardamom Powder
  • Extra Coconut for Coating

Instructions
 

  • In a bowl, add butter, fine sugar, vanilla essence and cardamom powder, Mix everything together until well combined.
  • Beat the mixture until it becomes creamy and pale in color but do not overmix.
  • Add all the dry ingredients to the butter mixture and mix until well combined.
  • If the dough feels too stiff then cookies may crack while rolling, add a little more milk and make a smooth, soft dough.
  • Shape the dough into small cookie balls. For evenly sized cookies, use a kitchen scale and weigh each dough ball to 15 g.
  • Roll each cookie ball in desiccated coconut until well coated then place them on a baking tray lined with parchment paper.
  • For crunchy cookies bake them in a preheated oven at 350°F (175°C) for 20–25 minutes or until the tops are lightly golden brown.
