Ingredients
- 250 gm All Purpose Flour
- 110 gm Desiccated Coconut
- 165 gm Butter
- 110 gm Icing Sugar
- 40 gm Sugar
- 20 gm Cornflour
- 4 tbsp Milk
- 10 gm Milk Powder
- 1 tspn Vanilla Essence
- 1/2 tspn Baking Powder
- 1/2 tspn Cardamom Powder
- Extra Coconut for Coating
Instructions
- In a bowl, add butter, fine sugar, vanilla essence and cardamom powder, Mix everything together until well combined.
- Beat the mixture until it becomes creamy and pale in color but do not overmix.
- Add all the dry ingredients to the butter mixture and mix until well combined.
- If the dough feels too stiff then cookies may crack while rolling, add a little more milk and make a smooth, soft dough.
- Shape the dough into small cookie balls. For evenly sized cookies, use a kitchen scale and weigh each dough ball to 15 g.
- Roll each cookie ball in desiccated coconut until well coated then place them on a baking tray lined with parchment paper.
- For crunchy cookies bake them in a preheated oven at 350°F (175°C) for 20–25 minutes or until the tops are lightly golden brown.
