A Zero Oil Chicken Stew sounds like a complete myth, right? We usually think chicken needs a good sizzle in hot oil or ghee to actually taste good. I definitely believed that lie for years. Then I tried boiling and slow-cooking my chicken with fresh vegetables. This simple method completely changed my weeknight dinner routine. You extract all the rich, natural flavors from the meat and veggies without adding a single drop of extra fat.
Who wants to feel sluggish and heavy after dinner? Not me, tbh 🤷♀️. You simply toss everything into a single pot, cover it with a lid, and let the gentle heat do the hard work for you. Because who actually enjoys scrubbing a greasy frying pan anyway? You save extra calories and you save dish soap. Win-win!
The Inspiration Behind the Dish
This chicken stew is inspired by the Nagaland boiled chicken recipe and made with minimum ingredients like chicken, potato, tomato and chilli. The best part of this recipe is that there is no need for oil. In the classic Nagaland chicken recipe, people often use bamboo shoot pickle or some spices but here I made it without them and it still tastes so delicious.
The spice level is completely your choice, so you can increase or decrease the quantity of chilli as per your taste. This chicken stew goes really well with plain rice.
