Cooked in Claypot with Juicy meat and egg

Crispy Claypot rice is a delicious dish made with chicken, prawns, egg, and ginger and garlic for extra flavor. The rice cooks in a pot until it forms a crispy layer at the bottom, while the chicken and prawns stay tender and juicy, and the egg adds richness. To make it even better, I added a sauce made from soy sauce, lime, honey, green onions, chili flakes, and roasted sesame. This sauce brings a perfect balance of tangy, sweet, and spicy flavors, with the sesame and chili flakes adding a nice crunch and heat. Every bite is a mix of soft, crispy, and flavorful textures, making it a truly satisfying meal.

Ingredients

  • 1 Clay pot
  • 3/4 cup short grain Rice
  • Cooking Oil
  • 1 Chicken Breast cut in thin strips( Choose any meat)
  • 12 Shrimp
  • 1 teaspoon crushed Ginger
  • 1 teaspoon Crushed Garlic
  • 1 tablespoon Cooking Oil
  • Salt and Pepper

For Sauce

  • 1 tablespoon Soy Sauce
  • 3/4 tablespoon Lime Juice
  • 1 tablespoon Honey
  • 1 tablespoon lightly roasted Green Onion
  • 1 teaspoon Chilli Flakes
  • 1/2 teaspoon Roasted Sesame Seeds

Instructions
 

  • Marinate Chicken ,Shrimp, Ginger ,Garlic ,Oil with Salt and Pepper. Marinate for at least 2-3 hours.
  • Mix Soy sauce, Lime juice, Honey, Roasted Green Onion ,Chilli Flakes and Roasted Sesame seeds mix all together for sauce.
  • Soak Rice in water for 15-20 mins than rinse well to remove all starch. Pour 1 cup of water , water should be enough to fully cook the rice.
  • Stir in between also. When 80% of water reduced start laying of marinated chicken, shrimp and rest of ingredients on top, Sprinkle some water and cover the pot.
  • Cook for about 12-13 min on low flame, when its cooked make a little space in center with spatula, pour 1 egg and cover lid for another 5 min on low flame.
  • After 5 min when its ready remove the lid and pour some sauce on top, Before start eating break the egg and mix everything together from bottom to top. Rice in bottom will be crunchy, this is best part and beauty of this recipe.
  • Serve Hot and Enjoy😋
