Hope you guys enjoyed my chickpea popcorn recipe before if yes then you will definitely love this one too. This time I’ve added fresh spinach and a mix of spices to the baked chickpeas making them even more flavorful and nourishing. The chickpeas turn crispy and golden in the oven while spinach adds a nice earthy taste and a boost of goodness. It’s crunchy, healthy and the kind of snack that makes you want to keep going back for more.

Ingredients

  • 250 gm Chickpea
  • 1/4 cup Cashew
  • 1 cup Spinach
  • 1 tbsp Ground Flaxseed
  • 1/2 tspn Dry Mint
  • 1/4 tspn Chilli Flakes
  • 3 tbsp Olive Oil
  • Salt & Pepper

Instructions
 

  • Start with soaking the cashews in water for 15–30 min.
  • Open a can of chickpeas and drain the liquid, Rinse the chickpeas well to remove the extra starch and make them clean before using.
  • Now in a blender add spinach, soaked cashew, chickpea and all the spices along with olive oil and blend it well like a paste.
  • Now on a baking pan lined with baking paper shape small popcorn by using hand or you can also use piping bag too.
  • Once done sprinkle sesame seeds on top for extra crunch.
  • In a preheated oven at 200°C bake for 30 minutes and yes! Its Ready.
