Ingredients

  • 1 cup orzo
  • 1 tbsn butter
  • 2 cup vegetable stock
  • 200 gm spinach
  • thumb size ginger
  • 2 tbsn chopped garlic
  • 6-7 coriander stem
  • 1/4 cup chopped onion
  • 1 tomato puree
  • 1 tspn red chilli powder
  • 1/2 tspn turmeric powder
  • 1 tspn coriander powder
  • salt and pepper
  • water
  • handfull of chopped coriander
  • 2 tbsn cooking cream
  • 1 tspn dry fenugreek leaves
  • pinch of cardamom powder(optional)

Instructions
 

  • In a pan add some butter and let it melt. Roast the orzo in the butter for 1–2 minutes until it turns slightly golden. Then pour in the vegetable stock and give it a gentle stir.
  • Once most of the water evaporates cover the pan with a lid and cook on low heat for 10–12 minutes or until the orzo is fully cooked and soft.
  • Blanch the spinach in hot water for 1–2 minutes then transfer it to cold water to keep the colour fresh.
  • Chop half of the spinach and keep it aside. Blend the remaining spinach with ginger, coriander stems and a little water to make a smooth paste.
  • In a pan, add some butter or ghee. Add the cubed paneer and roast it for 1–2 minutes or until it turns slightly golden on all sides.This step adds a nice flavour and texture to the paneer.
  • In the same pan heat some oil, You can also use ghee or butter if you want extra richness and flavour in the recipe.
  • Now add cumin seeds to the hot oil. Once they start to crackle add chopped garlic and roast it until it turns golden brown and fragrant.
  • Now add chopped onion and sauté it until it becomes soft. Add a little sugar it helps to caramelize the onion faster and also adds a nice depth of flavour.
  • Add red chilli powder, coriander powder, garam masala, salt and little water to help the spices cook properly. Stir well and cook the mixture until the oil starts to separate from the sides of the pan.
  • Now add the chopped spinach and the blended spinach paste to the pan. Pour in a little water and add chopped coriander leaves, Mix everything well cover the pan and cook for 2–3 minutes .
  • Now add the cooked orzo and roasted paneer to the spinach gravy. Pour in the cooking cream and mix everything well.
  • Sprinkle dry fenugreek leaves on top cover the pan and cook for 1 more minute to let the flavours blend together.
  • Now add a pinch of cardamom powder mix it well, and switch off the flame. Let it rest for a minute before serving to allow the flavours to settle.
  • For extra richness you can add cheese instead of cardamom powder. I personally love the subtle flavour of cardamom in Palak Paneer so I added that but feel free to choose what you enjoy more!

  • Before serving add some grated parmesan cheese on top if you’re someone who really enjoys cheesy flavour. It adds a creamy, savoury touch that pairs perfectly with the spinach and paneer.
