These teatime squash cookies or breakfast cookies are so so good, you can enjoy them any time of the day. They’re perfect for sweet cravings or just to munch on when you want something light yet satisfying. Very easy to make with a few simple ingredients like squash paste, egg, flour, butter, brown sugar, sugar, baking powder, cinnamon powder, chopped almonds or seeds, and a pinch of salt.

Ingredients

  • 1/2 Cup Cooked and Mashed Squash
  • 1 1/2 Cup All purpose Flour
  • 1/2 Cup Butter
  • 1/2 Cup Brown Sugar
  • 1/4 Cup White Sugar
  • 2 Egg
  • 2 tspn Baking Powder
  • 1 tspn Cinnamon Powder
  • 1 tspn Baking Soda
  • 1/2 tspn Salt
  • 1/4 tspn Nutmeg Powder
  • 1/4 tspn Ginger Powder
  • 1/4 tspn Chai Spice Powder
  • 1/4 Cup Sliced Almonds

Instructions
 

  • Start by removing the skin and seeds then cut it into medium small size pieces.
  • Now put it into a bowl of regular water to clean, then dry with a kitchen towel.
  • Transfer it into a microwave safe bowl, add 1–2 tablespoons of water and microwave for 5 minutes.
  • Once done mash it into a smooth paste and keep it aside.
  • Now in a bowl add brown sugar, sugar and butter mix it well.
  • Now add the egg and squash paste, mix well then add flour along with all the dry ingredients.
  • Make sure the batter is neither too dry nor too liquid then add chopped almonds or seeds.
  • Combine everything well and place the batter in the shape of cookies on a baking pan lined with parchment paper.
  • In a preheated oven at 350°F bake for 25–30 minutes or until golden.
  • Enjoy😋
