Mango Sesame Cake – Pair it with Coffee!

No-Bake or Baked? You Choose!

This sesame cake is truly delicious whether you bake it or not. I’ve also made a no-bake version which I’ll be sharing very soon. Both cooked and uncooked versions have their own unique taste and it really depends on what you prefer. Personally I loved the no cook version the most.

There Is A Banana Version Also

I’ve also made this cake with banana and that turned out amazing too. These breakfast cakes are full of flavour, easy to make and need only a few simple ingredients—no fuss at all. I love enjoying them with my morning tea (without sugar of course) because they’re already naturally sweet. They also go perfectly with a cup of coffee. If you’re always in a rush and don’t have time to make breakfast just prepare these cakes ahead of time and store them in the fridge. They’ll keep well for the whole week.

Ingredients

  • 2 mangoes
  • 1 cup almond flour
  • 2 cup white sesame seeds
  • 4 medjool dates
  • 2 tbsn chopped almonds

Instructions
 

  • Start by roasting the sesame seeds on medium-low flame until they turn golden or change colour.
  • Now cut the mangoes into small pieces and blend them with dates to make a smooth paste.
  • Now in a bowl add the mango paste, roasted sesame seeds, almond flour and chopped almonds.
  • Mix everything well until it forms a thick paste.
  • Now shape the mixture into rounds about 1 to 1.5 inches thick or shape them however you like.
  • Place the shaped cake on a baking tray lined with parchment paper.
  • Sprinkle chopped almonds on top for extra crunch.
  • Bake in a preheated oven at 350°F for 25 minutes or until golden in colour.
