Ingredients

  • 1/4 cup butterfly pea flower
  • 100 ml hot water
  • 1 cup wheat flour
  • 1-2 tspn olive oil

Instructions
 

  • In a cup add the flowers and pour hot water over them. Let it rest for 5–10 minutes or until it cools down to room temperature.
  • Once cooled down strain the water using a tea strainer.
  • In a bowl take whole wheat flour, slowly add pea flower water and mix it while kneading to form a soft dough.
  • Add a little oil and knead again until smooth.
  • Divide the dough into small, equal-sized balls.
  • On a lightly floured surface roll each ball into a thin, round shape with a rolling pin.
  • Heat a flat pan (tawa) and place the rolled roti on it. Cook one side until bubbles form then flip it, Now cook the other side and press gently with a cloth or spatula. Optionally you can puff it directly over a flame for a few seconds.
  • Once lightly browned and cooked through, remove from heat and serve hot with your favourite curry or just as a wrap.
  • Optionally apply butter or ghee on one side. It will keep roti softer for long time and also enhance taste.
