A warm bowl of soup is always the best and coziest way to start a big holiday brunch or special family meal.

Festivals Are For Sharing & Celebrating Together

This recipe also connects deeply with my Christmas memories so I want to share a small story from my childhood. I grew up in a small community, where most of the families worked for the same company. Out of nearly 100 families there was only one family who was celebrating Christmas. Even though the majority of people was not celebrating but the joy of December could still be felt everywhere.

From December 1st until January 1st, a big shining star was hung on a tall pole in the area. That single star meant everything. It became the symbol of the season. All the children waited eagerly every evening just to look at it and even the adults felt a quiet happiness seeing it glow in the night. The excitement in the air was pure and innocent. On the 25th of December, the neighbours and friends would slowly start celebrating Christmas in their own simple ways at midnight along that family with firecrackers, laughter and light. We were all kids back then and people were simple hearted. We didn’t understand religion or differences only humanity, sharing and togetherness.

One memory truly touches my heart. The uncle from our neighboring Christian family never baked just for his own home. Back then, baking was a challenge; we didn’t have modern ovens, only small, round aluminum electric ones, which bakes only cake. Yet, he and his family tirelessly baked cakes for almost everyone in the neighborhood. It was a true labor of love that required incredible patience.

He had to bake again and again making sure every family received a piece of Christmas cake. For him, it was not about celebration only for his own family, it was about sharing joy but for us especially as kids receiving that cake felt like receiving love. That simple act taught us kindness, generosity and the true meaning of the season something I still carry in my heart today. He made snacks and sweets for almost every family living in that area no one was left out. That act of kindness taught me more than any words ever could, Even today those memories give me goosebumps and fill my heart with warmth.

Ingredients

  • 2 Cups Chicken Stock
  • 1 Egg Yolk
  • 1/2 tspn Lemon Juice
  • 1/2 tspn Lemon Zest
  • 1/3 Cup Shredded Chicken Breast
  • Salt & Pepper

Instructions
 

  • In a saucepan add the chicken stock and bring it too boil, I used homemade but you can also use store bought.
  • In another bowl add the egg yolk, lemon zest, lemon juice and whisk them until creamy.
  • While whisking slowly add 1/3 cup of hot stock to the egg yolk mixture and whisk, this process is called tempering.
  • Now pour the tempered egg yolk mixture back into the stock pan and stir continuously.
  • Mix continuously and make sure the soup does not come to a boil.
  • It’s almost done! Serve the shredded chicken on a plate with rice on top and pour a generous amount of soup over it.
  • Sprinkle some salt and pepper to balance the taste and yes it’s ready to enjoy!
