Irish Potato Bundt Cake

Delicious & Easy

This Irish potato bundt cake is very delicious and easy to make. The best part of this recipe is using leftover potatoes, which give the cake extra softness and trust me, you won’t be able to stop at just one piece. This cake needs only basic cake ingredients along with leftover mashed potatoes or sweet potatoes. I haven’t made it with sweet potatoes yet but I’m sure it will be delicious too.

I’ve made this recipe many times before, but this time I made it for my daughter’s friends and their parents for a Christmas potluck and everyone absolutely loved the cake. During Christmas or the holiday season, we make a lot of food and often have leftovers so this recipe is perfect for that time. I’m sure everyone will enjoy it.

Ingredients

  • 2 cup All Purpose Flour
  • 2 tspn Baking powder
  • 2 tspn Cinnamon Powder
  • 2 tspn Cloves Powder
  • 2 tspn Nutmeg Powder
  • 2 cup Sugar
  • 1/8 tspn Salt
  • 2/3 cup Butter( Room Temperature)
  • 2 Eggs
  • 2 cup Leftover Mashed Potatoes
  • 3/4 cup Milk
  • 1/2 cup Chopped Walnuts

Instructions
 

  • In a bowl add butter and blend it until smooth using a hand blender.
  • Now add sugar and blend well.
  • Then add the eggs one by one blending after each addition.
  • Now add all the dry ingredients and mix well.
  • Add milk little by little and blend until the batter is ready.
  • Now add the mashed potatoes and mix really well. It may be a little hard to mix so use a blender if needed.
  • At last add chopped walnuts and give it a final mix.
  • Pour the batter into a greased 10-inch Bundt pan.
  • In a preheated oven at 325°F, bake for 90 minutes or until toothpick inserted in centre comes out clean.
