Korean Enoki and Chicken Pajeon – ready in 25 mins

Ingredients
- 1 Chicken Breast
- 1 Green Onion
- 1/4 Cup All Purpose Flour
- 2 Egg( for Batter and Cooking)
- 1/4 tspn Sugar
- Enoki Mushroom
- Salt & Pepper
- Chilli Flakes
- BBQ seasoning
- Chopped Coriander Leaves
- Oil
Instructions
- Slice the green onion and finely chop the coriander leaves then keep them aside.
- Cut the chicken into thin slices so it cooks easily. Marinate with salt, paprika, oil and BBQ seasoning then mix and keep aside.
- In a bowl, add flour, salt, pepper and egg, then mix to make a thin batter.
- On a flat skillet over medium low heat melt butter, Once melted pour batter and add enoki mushroom on top.
- Now layer with green onion, chicken, and chilli flakes then pour the beaten egg on top.
- Sprinkle BBQ seasoning and coriander leaves then pour melted butter on top.
- Flip on other side. You can also add a little more seasoning on the other side also if you like.
- Once both sides are fully cooked, it’s ready to serve hot with your favourite dip or sauce.
