Ingredients

  • 1 Large pear chopped in dice
  • 2-3 tbsp Light Brown Sugar
  • 1 tspn Cinnamon
  • 1 Cup Oat Flour
  • 1 Cup Almond Flour
  • 3 Eggs
  • 1/4 Cup Cornstarch
  • 1/3 Cup Maple Syrup
  • 1/3 Cup Olive Oil
  • 1 tspn Vanilla Extract
  • 1 tbsp Baking Powder
  • 1/4 tspn Salt
  • 1/4 Cup Sliced Almonds

Instructions
 

  • In a bowl add chopped pear along with cinnamon and brown sugar, mix them and keep aside.
  • Now another bowl beat the eggs with maple syrup, olive oil and vanilla then mix well.
  • Now add all the dry ingredients along with the pear mixture and almonds to the wet mixture then gently fold them but don't overmix.
  • Now pour the mixture evenly into greased muffin molds and bake at 375°F for 50–60 minutes.
  • Sprinkling some almonds on top is totally optional, if you don’t want to just skip this step.
  • Once done insert a toothpick into the center to check whether it comes out clean.
  • Allow the cakes to cool completely before removing the pan.
