Maple Pear Muffin Recipe

Ingredients
- 1 Large pear chopped in dice
- 2-3 tbsp Light Brown Sugar
- 1 tspn Cinnamon
- 1 Cup Oat Flour
- 1 Cup Almond Flour
- 3 Eggs
- 1/4 Cup Cornstarch
- 1/3 Cup Maple Syrup
- 1/3 Cup Olive Oil
- 1 tspn Vanilla Extract
- 1 tbsp Baking Powder
- 1/4 tspn Salt
- 1/4 Cup Sliced Almonds
Instructions
- In a bowl add chopped pear along with cinnamon and brown sugar, mix them and keep aside.
- Now another bowl beat the eggs with maple syrup, olive oil and vanilla then mix well.
- Now add all the dry ingredients along with the pear mixture and almonds to the wet mixture then gently fold them but don't overmix.
- Now pour the mixture evenly into greased muffin molds and bake at 375°F for 50–60 minutes.
- Sprinkling some almonds on top is totally optional, if you don’t want to just skip this step.
- Once done insert a toothpick into the center to check whether it comes out clean.
- Allow the cakes to cool completely before removing the pan.
