Sometimes it’s the fridge that decides our meals , It’s the vegetables getting old and mushy. In my family my little one is a big fan of spinach. She asks for it at least 3–4 times a week so we always keep at least one bag of spinach in the fridge, But sometimes plans change or we make too much food and end up finishing leftovers the next day. Fresh vegetables don’t like to wait so they start getting soft and mushy.

Let’s gather our supplies. You probably have most of these items sitting in your pantry right now. I consider recipes like this a huge win because they require zero fancy grocery store trips.

🗹 1/4 cup yellow lentil
🗹 1/2 cup split chickpea lentil
🗹 1/4 cup pigeon pea
🗹 1/4 cup chopped onion
🗹 2 tbsn crushed ginger garlic
🗹 10-12 cherry tomato
🗹 1/4 tspn turmeric powder
🗹 1 tspn red chilli powder
🗹 1/2 tspn cumin seeds
🗹 2 dry red chilli
🗹 1 Pod Garlic
🗹 1/4 tspn black pepper powder
🗹 Coriander leaves
🗹 2 cup water
🗹 Salt
🗹 2 tbsp Butter/Ghee

The Step-by-Step Cooking Process

Ready to cook? I promise this process feels super easy. Follow these simple steps, and you will build an incredible, healthy meal.

1. Prep Your Lentils

First, grab a bowl and add your mixed lentils. Wash them thoroughly under cold running water. You want the water to run completely clear.

2. Load the Pressure Cooker

I am using a pressure cooker but other pots like a slow cooker or a normal cooking pot is good too. Now, bring out your trusty pressure cooker. We literally throw everything into the pot right now. Pour in exactly 2 cups of water. Next, toss your soaked and washed lentils straight into the water.

Pile your fresh spinach right on top of those lentils. Do not worry if it looks like a lot; spinach shrinks down to almost nothing once heat hits it.

Add your chopped onions, cherry tomatoes, fresh coriander, and that essential crushed ginger-garlic paste. Finally, sprinkle in your turmeric powder, chilli powder, and salt.

3. Let the Heat Do the Work

Close the lid securely. Let the cooker do its thing over high heat. Wait for about 5 to 6 whistles. If you prefer using a slow cooker, simply set it on high for about 3 hours.

Once the pressure releases naturally, carefully open the lid. You will see a beautiful, earthy mixture waiting for you. Grab a wooden spoon and stir everything vigorously. You want the lentils and spinach to blend into a rich, creamy consistency.

4. The Magic Tempering Process

Are you ready to build the real flavor? We call this step the “Tadka” or tempering. It completely transforms the dish from basic to brilliant. Chop your extra garlic, slice some onions, and halve a few cherry tomatoes.

Heat a wide pan on your stove and drop in your butter or ghee. Let it melt down and get nice and hot. Toss in your cumin seeds first. Watch them dance and sizzle in the hot fat. Quickly follow up with your chopped garlic and dry red chillies. Throw the onions in last. Let everything toast until the garlic turns golden brown.

Finally, add your tomatoes and an extra dash of red chili powder for that vibrant color and kick. Stir it until the tomatoes turn soft and jammy. 🤤

5. Bring It All Together

Now for the most satisfying part. Take your cooked lentil and spinach mixture and pour it directly into your sizzling pan of spices.
