What’s for Dinner? Let the Fridge Decide!
Sometimes it’s the fridge that decides our meals , It’s the vegetables getting old and mushy. In my family my little one is a big fan of spinach. She asks for it at least 3–4 times a week so we always keep at least one bag of spinach in the fridge, But sometimes plans change or we make too much food and end up finishing leftovers the next day. Fresh vegetables don’t like to wait so they start getting soft and mushy.
“I have a beautiful spinach story from my childhood. It’s not just my daughter who loves spinach, I’m a big fan too, especially the red spinach leaves. Even now when I visit India, I ask my Maa to cook spinach and that’s all I need spinach with rice and some raw onion, Uff!! ultimate happiness.”
I still remember when I was a kid, one of our neighbours who loved to prepare this curry always shared it with us. Those were such amazing days people and neighbours were so kind and connected. I feel those things are missing these days; sometimes I even feel a little alone here. Anyway this is why today I chose to make this curry. I hope you will like it too – you can enjoy it with rice, bread or just as it is.
Lentil Spinach Curry literally saves my dinner plans when I stare at a fridge full of wilting greens. Do you ever buy a huge bag of fresh spinach with grand plans, only to let it sit there judging you from the vegetable crisper? We all do it, tbh. Are you really going to order takeout again when you can make this wholesome dish in under an hour?

Gathering Your Ingredients
Let’s gather our supplies. You probably have most of these items sitting in your pantry right now. I consider recipes like this a huge win because they require zero fancy grocery store trips.
Here is your straightforward checklist to build this flavorful curry:
🗹 200 gm spinach
🗹 1/4 cup yellow lentil
🗹 1/2 cup split chickpea lentil
🗹 1/4 cup pigeon pea
🗹 1/4 cup chopped onion
🗹 2 tbsn crushed ginger garlic
🗹 10-12 cherry tomato
🗹 1/4 tspn turmeric powder
🗹 1 tspn red chilli powder
🗹 1/2 tspn cumin seeds
🗹 2 dry red chilli
🗹 1 Pod Garlic
🗹 1/4 tspn black pepper powder
🗹 Coriander leaves
🗹 2 cup water
🗹 Salt
🗹 2 tbsp Butter/Ghee
The Step-by-Step Cooking Process
Ready to cook? I promise this process feels super easy. Follow these simple steps, and you will build an incredible, healthy meal.
1. Prep Your Lentils
First, grab a bowl and add your mixed lentils. Wash them thoroughly under cold running water. You want the water to run completely clear.
Soak them for at least 10 minutes. This simple step softens the lentils and drastically speeds up your cooking time.
2. Load the Pressure Cooker
I am using a pressure cooker but other pots like a slow cooker or a normal cooking pot is good too. Now, bring out your trusty pressure cooker. We literally throw everything into the pot right now. Pour in exactly 2 cups of water. Next, toss your soaked and washed lentils straight into the water.
Pile your fresh spinach right on top of those lentils. Do not worry if it looks like a lot; spinach shrinks down to almost nothing once heat hits it.
Add your chopped onions, cherry tomatoes, fresh coriander, and that essential crushed ginger-garlic paste. Finally, sprinkle in your turmeric powder, chilli powder, and salt.
3. Let the Heat Do the Work
Close the lid securely. Let the cooker do its thing over high heat. Wait for about 5 to 6 whistles. If you prefer using a slow cooker, simply set it on high for about 3 hours.
Once the pressure releases naturally, carefully open the lid. You will see a beautiful, earthy mixture waiting for you. Grab a wooden spoon and stir everything vigorously. You want the lentils and spinach to blend into a rich, creamy consistency.
4. The Magic Tempering Process
Are you ready to build the real flavor? We call this step the “Tadka” or tempering. It completely transforms the dish from basic to brilliant. Chop your extra garlic, slice some onions, and halve a few cherry tomatoes.
Heat a wide pan on your stove and drop in your butter or ghee. Let it melt down and get nice and hot. Toss in your cumin seeds first. Watch them dance and sizzle in the hot fat. Quickly follow up with your chopped garlic and dry red chillies. Throw the onions in last. Let everything toast until the garlic turns golden brown.
Finally, add your tomatoes and an extra dash of red chili powder for that vibrant color and kick. Stir it until the tomatoes turn soft and jammy. 🤤
5. Bring It All Together
Now for the most satisfying part. Take your cooked lentil and spinach mixture and pour it directly into your sizzling pan of spices.
Mix everything together thoroughly. Let it bubble for just a minute so the curry absorbs all that buttery, garlic-infused goodness. Your kitchen probably smells incredible right now!
6. Serving Up Your Masterpiece
How should you eat this beautiful creation? You have several legit options depending on your current cravings.
✔ Classic Rice: A warm bowl of basmati rice soaks up all the curry flavors perfectly.
✔ Fresh Roti: Tear off a piece of soft roti and scoop up the lentils. It feels incredibly comforting.
✔ Crispy Toast: Serve this with two slices of whole wheat toast and some raw onions. The crunch of the toast against the soft lentils tastes absolutely amazing.
Let’s be real for a second. You just saved a wilting bag of spinach from certain doom and created a massive pot of comfort food. Not bad for a lazy evening, right? This easy curry proves that you do not need hours in the kitchen to eat incredibly well.
Your local takeout place might miss your regular order tonight, but your wallet and your stomach will definitely thank you. Grab a big bowl, toast some thick bread, and enjoy your meal.
