Ingredients
- 3 Eggs
- 2 Medium size Potato
- 1 Medium size Onion
- 1 Green Onion
- Olive Oil
- Salt and Pepper
Instructions
- Peel the potato and cut it into medium-thin slices. Set it aside.
- Cut the onion into thin slices and chop the green onion.
- In a bowl, whisk the eggs with salt and pepper.
- Heat some oil in a pan over medium heat. Add the sliced onion and cook for 1 minute. Then, add the potato slices and cook until the potatoes are fully cooked.
- Strain the excess oil from the pan, then mix the cooked potato and onion with the egg mixture. Add the chopped green onion and gently stir everything together with a light hand.
- In a pan, heat some oil over medium-low heat. Pour in the egg mixture, cover the pan, and cook until the bottom is fully cooked.
- Now, carefully flip the omelette using a plate and cook the other side. Once both sides are fully cooked, it’s ready to eat.
