This is my take on this famous recipe, so many people may find it slightly different from classic recipe.

Why I Like This Omelette

It is super easy to make and always tastes amazing. Just a few simple ingredients like potatoes, eggs, and onions — that’s it! It’s soft, a little crispy, and really comforting. Ingredients

  • 3 Eggs
  • 2 Medium size Potato
  • 1 Medium size Onion
  • 1 Green Onion
  • Olive Oil
  • Salt and Pepper

Instructions
 

  • Peel the potato and cut it into medium-thin slices. Set it aside.
  • Cut the onion into thin slices and chop the green onion.
  • In a bowl, whisk the eggs with salt and pepper.
  • Heat some oil in a pan over medium heat. Add the sliced onion and cook for 1 minute. Then, add the potato slices and cook until the potatoes are fully cooked.
  • Strain the excess oil from the pan, then mix the cooked potato and onion with the egg mixture. Add the chopped green onion and gently stir everything together with a light hand.
  • In a pan, heat some oil over medium-low heat. Pour in the egg mixture, cover the pan, and cook until the bottom is fully cooked.
  • Now, carefully flip the omelette using a plate and cook the other side. Once both sides are fully cooked, it’s ready to eat.
  • Enjoy.😋
