The Spanish omelette, also known as “tortilla de patatas,” is a classic dish from Spain made with simple ingredients: eggs, potatoes, and onions. This delicious omelette is cooked slowly to create a soft, fluffy texture on the inside with a golden, slightly crispy outside. It’s a popular meal in Spain, enjoyed for breakfast, lunch, or dinner, and can be served hot or cold. Easy to make and full of flavor. This is my take on this famous recipe, so many people may find it slightly different from classic recipe.

Why I Like This Omelette

It is super easy to make and always tastes amazing. Just a few simple ingredients like potatoes, eggs, and onions — that’s it! It’s soft, a little crispy, and really comforting. What I love most is that it’s family-friendly — kids love it, and adults enjoy it too. I can serve it for breakfast, lunch, or even dinner, and it still tastes great even when it’s cold!

Spanish omelette is a popular dish, loved for being easy to make, flexible, and full of flavor. It’s a common meal in many homes and can be enjoyed anytime, whether for breakfast, lunch, or as a snack.

Ingredients

  • 3 3 Eggs

  • 2 2 Medium size Potato

  • 1 1 Medium size Onion

  • 1 1 spring Green Onion

  • Olive Oil

  • Salt and Pepper

Directions

  • Peel the potato and cut it into medium-thin slices. Set it aside.
  • Cut the onion into thin slices and chop the green onion.
  • In a bowl, whisk the eggs with salt and pepper.
  • Heat some oil in a pan over medium heat. Add the sliced onion and cook for 1 minute. Then, add the potato slices and cook until the potatoes are fully cooked.
  • Strain the excess oil from the pan, then mix the cooked potato and onion with the egg mixture. Add the chopped green onion and gently stir everything together with a light hand.
  • In a pan, heat some oil over medium-low heat. Pour in the egg mixture, cover the pan, and cook until the bottom is fully cooked.
  • Now, carefully flip the omelette using a plate and cook the other side. Once both sides are fully cooked, it’s ready to eat.
