Ingredients
- 1 Large Sweet Potato
- 2 Egg yolks
- 2 tablespoon Sugar
- 1/3 cup Milk
- 1/2 cup Heavy Cream
- 1/2 tablespoon Vanilla Extract
- 5-6 tablespoon Sugar for Brulee
Instructions
- First bake the sweet potato at 425°F until it becomes soft.
- In a bowl combine egg yolk, sugar, milk, and cream, mix everything well.
- Cook this mixture over medium heat for about 5-7 minutes or until it thickens.
- Cut the sweet potato in the middle but don’t split it. Open it up and mash the top part.
- Fill the sweet potato with creamy custard, sprinkle sugar on top, and caramelize it with a torch.
