Ingredients

  • 1 Large Sweet Potato
  • 2 Egg yolks
  • 2 tablespoon Sugar
  • 1/3 cup Milk
  • 1/2 cup Heavy Cream
  • 1/2 tablespoon Vanilla Extract
  • 5-6 tablespoon Sugar for Brulee

Instructions
 

  • First bake the sweet potato at 425°F until it becomes soft.
  • In a bowl combine egg yolk, sugar, milk, and cream, mix everything well.
  • Cook this mixture over medium heat for about 5-7 minutes or until it thickens.
  • Cut the sweet potato in the middle but don’t split it. Open it up and mash the top part.
  • Fill the sweet potato with creamy custard, sprinkle sugar on top, and caramelize it with a torch.
