Ingredients

  • 2 eggs
  • 40 gm brown sugar
  • 150 gm desiccated coconut

Instructions
 

  • In a bowl beat the eggs until they turn light and frothy.
  • Now add sugar in eggs and mix well until the sugar dissolves and the mixture becomes smooth.
  • Now add the desiccated coconut and mix well until it binds nicely with the egg mixture forming a soft and sticky dough.
  • Give the mixture any shape like ball and place them on a baking pan lined with parchment paper.
  • Bake in a preheated oven at 320°F (160°C) for 13–15 minutes or until the edges turn light golden.

    Hits the coconut spot! swapped the sugar with 1/4 tsp monk fruit extract. Any idea if any nuts might pair well with this? (like putting a macadamia nut on top of it to bake with etc)

      Adding a nut is really a good idea. use any nut of your choice. I like flavor of cashew or almond. It is really up to you.
