This Black Sesame Chicken is very close to me, not just because it looks great but also because it tastes so good. When I made it for the first time, I didn’t expect much But honestly until you try it yourself you’ll never know how amazing the taste is. The final look of this chicken might seem a bit strange, but the flavor is truly unforgettable.

In Assam (an Indian state), there’s a traditional recipe called Till Diya Kukura Mangxo a chicken dish cooked with black sesame and some simple spices. I’m making this recipe in my own style, not the traditional way but I hope you’ll like it just as much.

Deep Flavors, Simple Steps : Black Sesame Chicken is Magical (Video)
Ingredients
- 1/2 cup black sesame
- 7 medium size chicken thigh
- 1 big size sliced onion
- 1 tbsn crushed ginger garlic
- 1/4 tspn turmeric powder
- 1 tspn red chili powder
- 1 tspn cumin powder
- 1 tspn garam masala powder
- 2 tspn crushed coriander seeds
- mustard oil
- handful of coriander leaves
- lemon juice
- 2 bay leaves
- 2 dry red chili
- 3-4 green chili
- 1 black cardamom
- 1 small piece of cinnamon stick
- 3-4 clove
- 1-2 cup hot water
Instructions
- In a bowl marinate the chicken with turmeric powder, mustard oil, salt and pepper. Mix it well and set it aside for at least 15–20 minutes.
- In a pan on low heat dry roast the black sesame seeds until they start to pop and release a nutty aroma, Let them cool then grind them into a fine powder.
- Now in a pot heat some oil add black cardamom, coriander seeds, cinnamon stick, cloves and dry red chilies, Let them temper until fragrant.
- Now add ginger and garlic and cook for a minute or until they turn golden in colour.
- Now add sliced onions along with a pinch of sugar and cook until they turn golden brown and caramelized.
- Add all the dry spices (dry red chili, cumin powder, garam masala powder) along with salt and a splash of water. Mix well and cook for 1 minute.
- Now add the marinated chicken, mix well with the spices and cook for 4-5 minutes.
- Now add the black sesame powder. Stir everything together so the chicken is well coated.
- Cook for 3–4 minutes or until the oil starts to separate from the edges.
- Now add hot water, cover the pot and cook for 10–12 minutes or until the chicken is fully cooked.
- Switch off the flame add green chilies, chopped coriander leaves and a splash of lemon juice.
- Mix well cover the pot and let it rest for at least 7–8 minutes before serving.
