Ingredients

  • 400 gm chicken breast
  • 200 gm frozen mango
  • 100 gm mango puree
  • 1 tbsn yoghurt
  • 2 pods slice garlic
  • 1 inch julienne cut ginger
  • 1/4 cup slice onion
  • 4 tbsn lime juice for marination and sauce
  • 1 1/2 tbsn crushed ginger garlic (crushed together in mortar and pestle)
  • 1/2 cup chopped onion
  • 1/4 cup green bell pepper
  • 1/4 cup red bell pepper
  • 4 tbsn soy sauce
  • 4 tbsn ketchup
  • 1 tbsn honey
  • 1 tspn paprika
  • 1-2 tbsn green onion
  • 3/4 tspn sugar
  • salt as per taste
  • 1 tspn black pepper powder for cooking and marination
  • oil

Instructions
 

  • Start marinating chicken, yogurt, lime juice, ginger-garlic, onion, salt and pepper in a bowl. Mix well cover and keep it aside for 30 minutes.
  • In another bowl add soy sauce, lime juice, honey, ketchup and paprika, mix everything well to make a smooth sauce.
  • Now in a pot add oil and the marinated chicken. Cook on medium low heat until it turns golden and the water evaporates, keep stirring frequently.
  • Once the chicken is roasted keep it aside. In the same pot add a little oil and crushed ginger garlic cook for a minute or until it turns golden.
  • Now add chopped onion along with a little sugar as it helps caramelize the onion faster and adds a balanced taste to the dish but If you don’t like it just skip the sugar.
  • Now add the chopped bell pepper, mango pieces and prepared sauce. Mix everything well and cook for 1–2 minutes.
  • Now add mango puree and give it a nice stir. Once it starts bubbling add salt and black pepper then mix well.
  • Cover and cook for 2–3 minutes then add the roasted chicken. Cook for another 2 minutes add chopped green onion give it a nice mix and yes it’s ready to eat!
