Childhood Memories

I remember when I was young, my maa(mother) used to buy bananas every single day. In our small town the fruit seller used to come right to our doorstep, no need worry to go to shop and online shopping was not even an imagination in those days. My mom still does the same thing when I go to India, no matter what fruits papa brings from the market but maa(mother) never forgets to remind him to buy bananas.

Haha! Here in Canada it is the same for me, No matter what fruits we finish at home but bananas should always be in the fruit basket. It just gives me a different level of joy😂 If you buy bananas regularly it is obvious that sometimes you will have 2–3 overripe bananas which i don’t like to eat but I also don’t remember the last time I threw one away.

Its just like i always find a way to I use them either cooking or baking and somehow found the baking gives so many ways to use overripe banana and that is the real beauty of baking 😉 and obviously It helps me save my overripe bananas and i am just love in it ❤️.

Ingredients

  • 1 Overripe Banana
  • 1 1/4 Cup All Purpose Flour
  • 1/2 Cup Brown Sugar( Slightly less then Half Cup)
  • 3/4 tspn Baking Powder
  • 1/2 tspn Baking Soda
  • 1 tspn Cornstarch
  • 1 tspn Vanilla Extract
  • 40 gm Butter
  • 1/4 tspn Salt
  • 1 Large Egg
  • 0.5 cup dark chocolate

Instructions
 

  • Start by chopping the chocolate into slightly large chunks
  • In a bowl mash the banana really well make sure there should be no lumps.
  • In another bowl add all the dry ingredients and mix them well.
  • Now in another bowl mix butter with sugar then add the mashed banana and vanilla extract then combine everything well.
  • At last add the chopped chocolate and give it a good mix but do not overmix.
  • Place about one tablespoon of batter on a baking pan lined with parchment paper.
  • In a preheated oven at 375°F bake for 12-15 minutes or until golden.
