Slow Cooker Thai Chicken Curry With Coconut

Ingredients
- 3 Chicken Breast
- 12-15 Snow Peas
- 1 tbsp Crushed Ginger Garlic
- 2 tbsp caramelized Onion
- 3-4 tbsp Red Thai Curry Paste
- 1-2 tspn Chili Flakes
- 1 tbsp Sriracha
- 1 tbsp Dark Soy Sauce
- 400 gm Coconut Milk
- 2 Chopped Thai Red Chili
- 1/2 Lime Juice
- Oil
- Handful of Coriander Leaves
Instructions
- I used a slow cooker with a sauté function. If you are using a traditional slow cooker, then you can do the sauté steps in a pan first and then add everything to your slow cooker.
- Preheat the cooker on roast for 7–8 minutes, Once it's ready add oil along with crushed ginger-garlic .
- Now add the caramelized onion, sriracha, soy sauce and chilli flakes. Let it cook for 1–2 minutes.
- Now add the chicken and combine it well with the spices then add coconut milk and mix well.
- Cover and cook on high for 3–4 hours then add snow peas, chopped chilli and coriander leaves.
- Finish with squeeze of lime and give it a good mix, Serve with plain rice and your favorite side dishes.
