The Key to Make the Best Samosa Pie

The base of this dish is a simple dough made from flour, salt, carom seeds (ajwain), and butter, rolled out to form the pie crust. For the perfect flakiness, let the dough rest before using it.

The highlight of this dish is the stuffing, made with boiled potatoes and green peas. Spices like cumin, turmeric, coriander powder, and chaat masala enhance the flavor, while dried mango powder adds a tangy kick, and dried fenugreek leaves deepen the taste. Freshly chopped coriander brings a burst of freshness, tying everything together.

Cook the filling well in a pan to blend the flavors, then let it cool completely before assembling the pie.

Ingredients
 
 

  • 360 gram flour
  • 1 teaspoon carom seeds
  • 1 cup unsalted butter(cold and cube size)
  • 100 ml water
  • 1 egg
  • 4 big size boiled potatoes
  • 1/2 cup green peas
  • 1 tablespoon crushed ginger-garlic
  • 1 teaspoon crushed coriander
  • 1 teaspoon crushed cumin
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon chaat masala powder
  • 1 teaspoon dry mango powder
  • 1 tablespoon dry fenugreek leaves
  • Handfull of coriander leaves
  • salt as per needed for filling and dough

Instructions
 

  • Boil the potatoes until fork-tender then remove the skin and roughly crush them (do not mash finely).

  • Cut the unsalted butter into 1-inch cubes and keep it in the fridge until ready to use.
  • Now in a large bowl combine the flour, salt, and carom seeds, Mix well.

  • Now add unsalted butter and use your fingers to mix it thoroughly with the flour.

  • Slowly add water to the flour add more if needed and knead until the dough comes together, Make sure the dough is not wet or sticky.

  • Divide the dough into two equal parts, wrap in the plastic wrap and keep inside the fridge for 30 mins.

  • Heat oil in a pan add crushed coriander and cumin seeds and cook for 10 seconds. Then add crushed ginger and garlic and cook for 1 minute.

  • Add turmeric powder, red chilli powder, coriander powder, chaat masala powder, and a little water. Cook until the oil separates in the pan.

  • Add green peas, dry mango powder, salt, and dry fenugreek leaves, then cook for a few more minutes.

  • Add the coriander leaves, mix well, and turn off the heat. Then add this mixture to the potatoes and mix thoroughly.

  • Grease generously pie pan with butter and preheat the oven on 375 F.

  • Roll each piece of dough into an 11” disk or large enough to cover a 9” pie pan with a slight overhang, Dough should be about 1/8” thick.

  • Drape one crust over the pie pan, pressing it gently to fit the pan. Add the potato filling spreading it into an even layer.

  • Place another crust over the filling and press to seal it with the bottom crust. Trim any excess dough and crimp the edges as desired.

  • Brush the top with egg wash and cut a small hole in the centre of the pie with a knife for venting.

  • Bake for 30-40 minutes on the middle rack of the oven until the crust is golden brown from both side top and bottom.

    Hello lovely, what kind of gluten free dough would you suggest for this pie? just curious 🙂

      Thank you for your comment. To make samosa gluten free you will need mix of flours like corn, rice, tapioca and potato flour then only samosa crust will be crispy. I am also planning to make this recipe soon and I will post here too.
