I Added Broccoli Because My Daughter Loves it

I’ve always loved baking bread but I usually stay away from all-purpose flour as it tends to bloat my sensitive stomach. Most of the time I prefer whole wheat, lentil, or gluten-free flours for healthier bakes. But this time, I decided to make an exception for my husband and daughter, who are both big fans of cheese. I paired all-purpose flour with cottage cheese, and for an extra twist, I added broccoli one of my daughter’s favorite making it perfect for her school lunchbox.

Healthy Breakfast or Snack Option

The spinach and broccoli not only give this bread a fresh green colour but also pack it with fiber, vitamins and antioxidants. Cottage cheese adds protein and calcium, making the bread more filling and nourishing. If you like a stronger flavor, halloumi can be used or if cheese isn’t your thing, you can skip it altogether. Lightly spiced this bread is versatile enough for breakfast with a hot cup of tea or coffee or even as a wholesome snack any time of the day. It’s a loaf that balances health, flavor and a touch of indulgence baked with love for the family.

Ingredients

  • 1 1/2 Cup All Purpose Flour
  • 120 gm Cottage Cheese(Optional Halloumi Cheese)
  • 1 Cup Blanched Broccoli
  • 1/2 Cup Blanched Spinach
  • 2 Egg
  • 1/4 Cup Olive Oil
  • 1 tspn Baking Soda
  • 1/2 tspn Salt
  • 1 tspn Sugar
  • 1 tspn Cumin Powder
  • 1/2 tspn Pepper Powder
  • 1/2 tspn Chili Flakes
  • 2 tbsp Sunflower Seeds
  • 2 tbsp Pumpkin Seeds

Instructions
 

  • Start by chopping the blanched broccoli into small pieces.
  • Now cut the cheese into your desired shape and size.
  • In a blender add the spinach and blend until smooth.
  • In a bowl beat the eggs with olive oil for 1–2 minutes then add the spinach mixture and mix well until.
  • Using a sieve sift the flour along with all the dry ingredients directly into the egg mixture.
  • Now add the chopped broccoli along with all the spices and seeds then gently mix until combined be careful not to over mix.
  • Now pour 1/2 mixture into a bread baking pan lined with parchment paper and add a layer of cheese on top.
  • Now repeat with more mixture and finish with cheese and seeds on top.
  • Bake in a preheated oven at 350°F for about 50 minutes or until a toothpick inserted in the center comes out clean.
