This chickpea crackers is so good and very easy to make with just a few simple ingredients like boiled chickpea , sunflower seeds, sesame seeds, roasted pepper and a few spices. I’ve made many crackers before and truly feel these are the best for cravings. This Chickpea cracker are high in protein and are also suitable for diabetic people.

Diabetic Friendly Recipe

These days whenever I make different recipes, I always worry about how I’ll finish the food because husband is diabetic and my little one obviously eats very little. Thank God I have a good neighbor, who is always happy to take my food 😉 But when I make crackers with chickpeas, oats or seeds, I never worry about how they’ll get finished because these are diabetic friendly and husband enjoy them without guilt.

So make these crackers, at least try once and share your thoughts because that’s the only way I’ll know how I’m doing.

Ingredients

  • 1 1/2 Cup Boiled Chickpea
  • 2 tbsp Sunflower Seeds
  • 2 tbsp Flax Seeds
  • 2 tbsp Sesame seeds
  • 1 tspn Chilli Flakes
  • 1 tspn Dried Fenugreek Leaves
  • 1 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • 1/4 tspn Turmeric Powder
  • 1/2 tspn Roasted Cumin Powder
  • 3 tbsp Water
  • 1 tbsp Cornstarch
  • Salt and Pepper

Instructions
 

  • In blender add chickpeas, sunflower seeds, salt and water, Blend until smooth.
  • Now transfer the chickpea paste to a bowl, add all the other ingredients and mix well.
  • Now in a baking tray lined with parchment paper, spread the mixture evenly.
  • It shouldn’t be too thick spread it thin like a cracker otherwise, it won’t be crunchy.
  • In a preheated oven bake it at 350°F for 35-40 minutes, Remove it and let it cool completely for at least 2–3 hours.

      Hi, you can store in airtight container in fridge. Shelf life is around a week

      yes you can use canned chickpeas also. use same amount of ground fenugreek as dried fenugreek.
