Lentil breadsticks with spicy dip

If you are looking for a healthy, high-protein alternative to traditional baking, this Lentil Breadstick recipe is going to change your snack rotation. Packing 19g of protein and a massive 27g of fiber per serving, this 50-minute recipe completely transforms simple legumes into a savory, sliceable loaf.

Because we are entirely skipping traditional wheat, working with legumes requires a completely different approach to baking. Here is everything you need to know to master this unique, nutrient-dense bake.

The Anatomy of a Perfect Lentil Breadstick (The Secret Technique)

Traditional breadsticks rely on gluten for their chewy structure, but this recipe utilizes a clever combination of alternative binders and you will get completly gluten free breadsticks. The secret to getting a dough-like consistency without wheat is combining 2 Cups of soaked Bengal Gram Lentil (Chana Dal) with 1/4 Cup of Pearl Millet Flour.

However, the real structural magic comes from the 8 teaspoons of Phylium Husk, which absorbs moisture and binds the loaf together. To ensure the dense lentils do not turn into a heavy brick, the recipe relies on a precise chemical reaction: you will use 1/2 tspn of baking soda and 1 tbsp of vinegar to create an instant, airy lift within the batter.

How to Avoid a Crumbly Disaster

When baking with a wet lentil base, the margin for error usually comes down to moisture control and texture preservation. Pre-empt these common failures with these crucial steps:

  • The Moisture Trap: When processing your base, you will add the lentils along with all the ingredients except the pearl flour, sundried tomatoes, chilli flakes, and coriander leaves. You should only add water if needed to blend into a smooth paste. It is vital to make sure the batter should be neither too thick nor too runny; otherwise, you will not be able to successfully shape the lentil mixture into a loaf of bread.
  • The Texture Killer: Never blend your mix-ins! You must transfer the paste to a bowl first, and then add the flour along with the remaining ingredients. By hand-mixing the 1/4 cup of sundried tomato and 1-2 tspn of chilli flakes, you mix well until everything is fully combined without turning those beautiful, flavorful chunks into mush.

Lets make it…
