Indian Summer & Pickle
Pickles are popular sides and I grew up watching my mother make them every summer especially during the peak heat. In India summer means extreme heat around 40 to 50°C. It’s very hot for people who aren’t used to it or have never visited before. If you’ve never been to India, I’d suggest avoiding the summer months. Winter or fall is a much better time to enjoy and explore the country comfortably.
I’ve been living in Canada for quite a long time and I visited India once during the summer. That one visit was enough to realize no more Indian summers for me unless it’s an emergency or something very important.
But this story is not just about summer it’s about pickles. In the northern part of India as summer begins many moms start preparing homemade pickles what we call Achaar (Pickle). As soon as raw mangoes hit the market the season begins. These days you can find pre-cut mangoes easily but back then it was a full family activity.
My mom and dad would pick a day when my dad was off work. He would cut the mangoes and my mom would prepare the spices. Together they’d make magic jar full of love and flavor. Even now my mom still makes pickle every summer and whenever i visit home, I enjoy it with dal, rice or chokha (mashed potatoes) my all time favorite comfort meal.
This Pickle Recipe is Much Simpler and Quick
Indian style homemade pickles aren’t easy to make. They need a lot of patience and hard work and a lot of sun! It usually takes 1 to 2 months of strong sunlight to get that deep, rich flavor. Just thinking about it is making my mouth water but today I’m sharing a Persian-style pickled cucumber, it’s super easy and doesn’t need sunny days or long waiting times. You can prepare it in just a few minutes. Fermenting is optional but if you do the flavors will become even deeper. One day, I’ll definitely try making traditional Indian pickle myself but for now you must try this quick Persian pickle at least once.

Quick Pickled Cucumber – Make Your Meals More Delicious
Ingredients
- 7 cucumber
- 6 garlic pods
- 5 sliced ginger
- 5 green chilli
- dill leaves
- 10 chickpea
- 150 ml vinegar
- salt
- water
Instructions
- Boil water in a pot meanwhile begin adding everything into a jar.
- Start by poking the cucumbers so they can easily absorb all the flavours.
- Now add cucumber, dill leaves, ginger, garlic, chilli and chickpeas into the jar.
- Now add salt and vinegar then fill the jar with water until the jar is full.
- Close the lid and place the jar into the pot of boiling water.
- Make sure the water covers more than half of the jar.
- Now let it simmer for at least 15–20 minutes or until cucumbers change the colour.
- Once boiled remove from water and let it cool or refrigerate, Its ready to enjoy.
