Colorful Beetroot Roti

Beetroot roti is a simple and healthy roti you can enjoy with any curry or even just with plain yogurt. Its bright color makes it look so beautiful on the plate. The first time I made it I was really amazed by how lovely it looked. If you’re tired of eating plain roti every day then this beetroot roti is a must-try. It’s not only colorful but also full of nutrition. Even kids enjoy it and it’s a smart way to add more veggies to their meals or lunch boxes.

Colorful and Healthy Beetroot Roti (Cooking Video)

Ingredients

  • 1 Beetroot
  • 1 cup whole wheat flour
  • 1/2 tspn olive oil
  • 1/2 cup water as needed

Instructions
 

  • Peel and chop the beetroot, Put it in a blender add water and blend it well into a smooth puree.
  • After blending strain the beetroot puree using a sieve to remove any thick bits and get smooth juice.
  • In a bowl take whole wheat flour. Slowly add beetroot juice and mix it while kneading to form a soft dough.
  • Add olive oil and knead again until smooth.
  • Divide the dough into small, equal-sized balls.
  • On a lightly floured surface roll each ball into a thin, round shape with a rolling pin.
  • Heat a flat pan (tawa) and place the rolled roti on it. Cook one side until bubbles form then flip it, Now cook the other side and press gently with a cloth or spatula. Optionally you can puff it directly over a flame for a few seconds.
  • Optionally, Apply butter on top. Butter will keep roti soft for long time.
  • Enjoy the beetroot roti with any curry of your choice, plain yogurt or simply as it is—it will be delicious any way you have it!
