A Quick Diabetic Friendly Recipe

This simple tomato egg fry takes under 15 minutes. It’s not just easy and satisfying, but also diabetic-friendly. Just roughly chop the tomatoes and sauté them with garlic and green onion until fragrant. Add a little spice a splash of sauce, then scrambled eggs and that’s it. Ta-da! It’s ready. So simple comforting and full of flavour.

Sugar is Optional

If you like a slightly balanced taste on the tongue, you can add a tiny pinch of sugar. I personally love it that way but since this is diabetic-friendly, I’ve skipped the sugar here. Enjoy it with quinoa or plain rice; it works beautifully with both. Perfect for busy days when you want something quick, wholesome and truly satisfying.

Ingredients

  • 4 Eggs
  • 3 Tomatoes
  • 2 Pod Sliced Garlic
  • 3 Green Onion
  • 1 tbsp Soy Sauce
  • 1/2 tbsp Oyster Sauce
  • 2 tbsp Tomato Sauce
  • 1 tspn Mushroom Powder
  • Salt and Pepper
  • 1/4 tspn Turmeric Powder
  • 1/2 tspn Red Chilli Powder
  • Chopped Coriander Leaves

Instructions
 

  • Start by roughly chopping tomatoes and green onion.
  • Now in a bowl beat the eggs with salt and pepper.
  • Once the pan is hot add oil then pour in the egg mixture. Scramble it but keeping it slightly runny.
  • Keep the eggs aside and in the same pan add a little oil along with chopped garlic and green onion.
  • Roast them for a few seconds then add chopped tomato, water, salt and red chilli powder.
  • Mix well, cover and let it cook until the tomatoes are slightly soft.
  • Now add all the sauces along with mushroom and pepper powder.
  • At last add the scrambled eggs and gently mix with a light hand.
  • Finish with coriander leaves and a drizzle of sesame oil and that’s it.
  • Enjoy with cooked plain rice or quinoa along with your favourite sides.
