Tasty & Healthy
This shepherd’s pie is so delicious and you will love it from the first bite till finishing the plate. I am making this recipe in my way and it is diabetic friendly too. I am using chicken breast mince which is also a good source of protein for diabetic people, instead of potato i am using sweet potato (purple one). I want to admit that these days I am also really enjoying diabetic-friendly food. There are two reasons: first I don’t want to cook too much food 😉 and second in all these recipes I am just replacing the ingredients not the flavour. In fact these diabetic friendly recipes are high in fibre and protein too.
Sweet Potato Is So Good
I am not a big fan of potato not even my daughter. Yes before husband was enjoying eating potatoes but now he doesn’t want to touch it so I am happy. I love sweet potato especially the purple one either boiled or roasted. That’s it I don’t want anything else with sweet potato, i can feel my stomach just with this. This recipe came out really incredible and after finishing a big dinner 2 hours later husband’s sugar level was just at the perfect level. I’ll try to make more and more diabetic friendly recipes so diabetic people can also enjoy food without feeling guilty.
I Prefer Chicken For Meat
In Classic shepherd’s pie is usually use lamb or beef and topped with mashed regular potatoes but in my version using chicken mince and purple sweet potato to making it lighter, high in protein and diabetic-friendly and still it very very tasty too.
