Fall is here and it’s the perfect season for apple picking! 🍎 When you have too many apples at home, there are so many delicious ways to enjoy them. You can make apple pie, apple jam, apple cake or even my ” Fresh Apple Kimchi” which adds an extra crunch and refreshing flavour to your meals. If you love trying something different with seasonal fruits, this easy apple kimchi recipe is definitely worth making.

A Fresh Twist on Korean Kimchi
Kimchi is a traditional Korean dish, usually made with fermented vegetables like napa cabbage and radish. It is famous for its spicy, tangy and delicious flavour but today I am sharing my own version using fresh, juicy apples. Unlike traditional fermented kimchi, this is a quick and refreshing version that you can enjoy immediately.
The best part about this Fresh Apple Kimchi Recipe is how simple and quick it is to prepare. You only need a few ingredients, including fresh apples, ginger, garlic, chilli and a few seasonings. I also added ginger ale for a slightly sweet and refreshing twist. Just chop the apples, mix everything together and your delicious apple kimchi is ready in about 10–15 minutes. No cooking or special equipment is needed.

Apple Kimchi ingredients – Fresh Apple, parsley, garlic, soy sauce, gochujang chilli, ginger ale
Apples are naturally rich in fibre, contain vitamin C and provide antioxidants. They are also naturally sweet and juicy, which helps balance the spicy and tangy flavours of the kimchi seasoning. This recipe is a lovely way to add more fruit to your meals while enjoying something crunchy and flavourful.
Serving and Storage Tips
You can serve this fresh apple kimchi as a side dish with steamed rice, fried rice, noodles, grilled chicken, fish or your favourite Asian-inspired meals. I personally love how the sweet, spicy, and tangy flavours come together in every bite. It makes even a simple meal more exciting.
Another good thing about this recipe is that you can prepare it ahead of time. Store it in a clean, airtight container in the refrigerator and enjoy it within 5–6 days. Mine has been in the refrigerator for more than 10 days and it still looks good, although the apples are no longer as crunchy as they were on the first day. The texture becomes softer and the flavours develop over time, giving it a slightly fermented salad like taste that I personally enjoy. However because this is a fresh recipe rather than a controlled fermentation, I recommend enjoying it within 5–6 days for better freshness and quality.
So, if you have plenty of apples after your fall apple-picking trip, don’t just think about pies and jams. Try this easy homemade fresh apple kimchi for something different. It’s quick, colourful, refreshing and full of flavour. A simple recipe that brings a little Korean-inspired twist to your fall kitchen. Give it a try and let me know in “comment” how you like it!🍎
