Soya Chukauni—ahh!! this is one recipe I really love, so I make it quite often! 😁 And the reason is simple: it is super easy, full of flavor and can be ready in about 15 minutes.
Minimal Effort, Maximum Comfort Recipe
It is perfect for those lazy days when you are hungry but don’t want to put too much effort into cooking. All you need is yogurt, onion, a few simple spices and your main ingredient. I used soya chunks because they are easy to find, I usually have them at home throughout the year and they are also a good source of protein but you can easily make your own version with potato, chicken, fish or another ingredient you enjoy.
Chukauni is a popular traditional dish from Nepal, especially associated with the Palpa region in western Nepal. The classic version is usually made with boiled potatoes mixed with yogurt, onion, spices, and a flavorful tempering. It has a lovely combination of creamy, tangy, spicy and slightly smoky flavors, which makes such simple ingredients taste surprisingly delicious.
You Need Simple Ingredients
- Soya Chunks : 1 cup (plant based protein rich)
- Yoghurt : 2 cup
- Onion : 1 thin sliced
- Crushed ginger garlic : 1 tbsp
- Green chilli : 2 chopped
- Spices : 1 tspn coriander powder, 1 tspn roasted cumin powder, 1/2 tspn turmeric powder
- Oil : 1 tbsp
- Salt & pepper : as per taste
- For Tempering use – 1 tspn red chilli powder, 1 tspn dry fenugreek leaves & 1 tbsp oil
For this version, I replaced the traditional potato with soya chunks to make it a little more protein-rich while keeping the same comforting Chukauni-style flavors. I have also made a potato Chukauni before, so you can check out that version too if you would like to try the more traditional style.
For tempering I used mustard oil because it adds a strong, distinctive flavour to the dish. Feel free to use oil of your choice.

Protein-Rich Soya Chukauni
Ingredients
- 1 Cup Soya Chunks
- 2 Cup Yoghurt
- 1 Sliced Onion
- 1 tbsp Crushed Ginger Garlic
- 1 tspn Coriander Powder
- 1 tspn Roasted Cumin Powder
- 1/2 tspn Turmeric Powder
- 2 Chopped Green Chilli
- Salt & Pepper
- 1 tbsp Oil
For Temparing:
- 1 tspn Red Chilli Powder
- 1 tspn Dry Fenugreek Leaves
- 1 tbsp Mustard Oil
Instructions
- In a bowl add the yogurt and salt, Mix well and set it aside.
- Now heat oil in a pan add the crushed ginger and garlic then sauté until they turn light golden.
- Now add soya chunks and roast for 1–2 minutes then add all the dry spices along with salt and cook until the spices become fragrant and well roasted.
- For the tempering heat oil in a small pan. Once hot add the dried fenugreek leaves and red chili powder.
- Add the sliced onion and roasted soya chunks to the yogurt. Pour the tempering over the mixture then mix everything well until nicely combined.
- Serve with hot steamed rice along with pickle and your favourite greens.
