This Is A Versatile Recipe
This recipe is very similar to chilla which is a popular and healthy Indian breakfast. It’s a great option for vegetarians and vegans and is naturally high in protein. Everyone makes it in their own way some people skip yogurt and use water, some add eggs and some mix chickpea flour with other gluten-free flours.
The main difference is the cooking method, Chilla is cooked on a pan over low heat like a crepe but here I used the oven and made it in cupcake form. The batter is also slightly thicker than regular chilla batter.
How to Store Them
Once baked these cupcakes store really well. You can keep them in an airtight container for 5–6 days inside the fridge. Just microwave for about 30 seconds before breakfast and your healthy meal is ready in minutes. Pair it with a cup of coffee and you’re good to go.

Ingredients
- 1 1/2 Cup Chickpea flour
- 1 Cup Yoghurt
- 1/2 Cup Olive Oil
- 1/4 Cup Chopped Onion
- 1/4 Cup Shredded Carrot
- 1/4 Cup Chopped Beans
- 1/4 Cup Sweet Corn
- 1/2 Cup Shredded Tofu
- 2 tspn Baking Powder
- 1 tspn Baking Soda
- 1 tspn Chilli Flakes
- 1 tspn Dried Rosemary
- Salt & Pepper
- Jalapeno
Instructions
- In a bowl add yogurt, salt, pepper and little water and mix well.
- Add olive oil along with chopped vegetables and tofu then mix them again.
- Now add all the dry ingredients along with the spices and mix to make a cupcake batter.
- Pour the batter into muffin cups, put sliced jalapeno on top and bake in a preheated oven for 20–25 minutes at 375F.
- Let it cool completely before removing the cupcake liners.
