I recently tried making this Afghan-inspired omelette for the first time and it turned out to be absolutely delicious! It’s a great choice for anyone looking for a healthy & fulfilling meal that’s loaded with vegetables. If you’re not a fan of spices you can easily skip them and it will still taste amazing. I highly recommend giving it a try at least once. This Afghan omelette is quite similar to “shakshuka,” a popular Middle Eastern dish made with eggs poached in a spiced tomato sauce. The main difference is that the Afghan version is less saucy than shakshuka but both are packed with flavor and make a great meal any time of day.

Ingredients
 
 

  • 3 Eggs
  • 1/2 Cup Roughly Sliced Onion
  • 1 Cup Tomato
  • 1/2 Cup Roughly Chopped Green Bell Pepper
  • 2 Teaspoon Minced Garlic
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Roasted Cumin Powder
  • 1 Teaspoon Paprika
  • 1 Tablespoon Coriander Leaves
  • Salt and Pepper
  • 1 Tablespoon Oil

Instructions
 

  • Heat some oil in a pan now add chopped onion, garlic, tomato, and bell pepper.
  • Sauté for 1 minute then add all spices and salt, mix everything well.
  • Sauté for another minute then make space for eggs the and crack the eggs into it.
  • Cover the pan and cook for 2-3 minutes or until the eggs are done.
  • Now it’s ready to serve with fresh Bread or just like this.

    I have friends that are vegan do you have vegan egg substitute?

      You can try tofu paste instead of egg.
