Pesto feta omelette is made with basil pesto and feta cheese & served with rice. Creamy feta and aromatic pesto add a delicious twist to this omelette recipe. This is a protein-rich and flavorful breakfast or light lunch!

Ingredients

  • 1 1 Egg

  • 3 teaspoon 3 teaspoon Pesto (1 teaspoon for rice)

  • 2 tablespoon 2 tablespoon Feta Cheese( as per needed)

  • 1/4 teaspoon 1/4 teaspoon chili flakes

  • Salt and Pepper (as per needed)

  • 1/2 cup 80 g Cooked rice

Directions

  • Place the feta cheese in a pan and spread it around. Make a small space in the middle then add the pesto on top of the feta.
  • Pour the egg into the centre and sprinkle chilli flakes and black pepper on top.
  • Now cover the pan and cook for 1-2 minute or until the egg is set and the feta cheese is crispy on the bottom.
  • When the egg is ready, place it on a plate.
  • Now, In the same pan, add the cooked rice and pesto and mix them well.

  • Now, in a plate place the egg on top of the rice, and it’s ready to eat. You can enjoy it with any type of bread or pasta, as you like.
