Small Egg Fry Pan – for fluffy thick omelette

Ingredients

  • 2 Eggs
  • 1/4 cup Blanched Spinach
  • 2-3 Blanched Broccoli Florets
  • 1 pod Garlic
  • 1 Green Chilli
  • Coriander leaves
  • Salt & Pepper

Instructions
 

  • In a bowl beat the eggs with salt and pepper.
  • In a blender add spinach, broccoli, garlic, green chilli and coriander leaves and make a smooth paste.
  • Now mix the spinach paste with the egg mixture and combine them well.
  • In a pan add olive oil and pour in the green egg mixture.
  • Once the bottom is set, fold the omelette in half and shape it like a moon.
  • Flip it and cook it on both sides, now its ready.
