Ingredients

  • 1/4 cup Soy milk or Water
  • 6 oz Extra firm Tofu
  • 1 tablespoon Brown Rice Flour
  • 1 tablespoon Cornstarch
  • 1/8 teaspoon Turmeric
  • 1/4 teaspoon cayenne Pepper
  • Salt and Pepper as per taste

Instructions
 

  • Remove tofu from package, draining all liquid. Cut in small pieces to blend smoothly.
  • Place all the ingredients in blender or food processor and blend it until smoothly if not add additional soy milk/water.
  • In a pan over medium heat add olive oil , pour the batter into the pan .Spread the batter gently to completely coat the bottom. Cover the lid and cook for 6-8 minute on medium low heat until the top appears dry. If the omelet doesn’t move freely when shaking the pan gently loosen the botton with the help of spatula.
  • Meanwhile this is good time to prepare filling of your choice. Suggested Filling : * Sauteed Mushroom and Spinach with roasted Garlic( the one i prepared in the video). * Onion and Bell Pepper with any Vegetable of choice. * Avocado with Vegan cream cheese. * Any Vegan meat substitute. * Sauteed Potato with vegan cheese.
  • Once bottom is cooked flip it and cook till golden colour on both side.
  • For serving either you can put the toppings on half side of omelet and fold it or just put the omelet on serving plate and put the toppings on top ,Serve hot.
