Dijon Mustard Really Enhance Taste
This leek rustic pie is not only easy to make but even better to eat. It needs just a few simple ingredients like flour, leek, onion, dry ricotta cheese and a few more basics and it comes together beautifully. Before this recipe I had never tried old-style Dijon mustard. I used it here and honestly it’s amazing. You can feel its flavour in every bite so so good!
This Is A Diabetic Friendly Recipe
I don’t eat pizza because I’m not a big fan of cheese. My husband is diabetic, so he usually avoids pizza to keep his blood sugar stable—even when he gets a craving for it. This rustic pie isn’t pizza; it is definitely a pie. But trust me, after eating this, you won’t miss pizza at all.
Okay I know it sounds a bit odd to say a pie can beat pizza 😉 but something is always better than nothing right 😁
What I really want to say is if you’re diabetic don’t worry, You can enjoy this recipe too not just one or two slices but until your tummy feels full. In this pie, I used black gram flour which is perfect for diabetic people and also protein-rich too. After this shoot you won’t believe it but my husband ate three slices of this pie for dinner.
I usually combine black gram flour and wheat flour in an 80–20 ratio to make tortillas (roti). It’s very diabetic-friendly; I make these almost every day, and my husband’s blood sugar levels always stay stable. This recipe is healthy, easy, and gut-friendly. Healthy Leek Rustic Pie For Your Gut & Blood Sugar

Ingredients
- 160 gm Black Chickpea Flour
- 40 gm Wheat Flour
- 60 ml Olive Oil
- 1 Egg
- 25 ml Water
- Salt
- 400 gm Chopped Leek
- 1/2 Sliced Onion
- 2 tspn Chopped Garlic
- 2 tspn Light Soy Sauce
- Black Pepper
- 1-2 tbsp Old style Dijon Mustard
- 1/4 Cup Shredded Cottage Cheese
- 1/4 Cup Ricotta cheese
- Fresh Herbs(Thyme & Rosemary)
Instructions
- Make a firm dough using black gram flour, wheat flour, water, oil, a pinch of salt and an egg.
- In a pan add oil along with chopped garlic, leek and onion. Once they soften add soy sauce, salt and pepper. Mix well and keep it aside.
- Now on a rolling surface sprinkle some flour and roll the dough thin about 2 mm thick.
- Now place the rolled dough on a baking tray lined with parchment paper.
- Make holes all over the dough using a fork or knife, this will help the dough turn crunchy.
- Now spread Dijon mustard evenly all over the dough leaving a 1-inch border around the edges.
- Layer the shredded cottage cheese then leek mixture, shredded cottage cheese, fresh herbs and finally drizzle some olive oil on top.
- Fold corners from all sides.
- Bake it in a preheated oven at 385°F for 30 minutes.
