The ingredients are simple and easy to find. Lentils are the main ingredient along with spinach and a mix of seeds, which add extra nutrition, texture and a lovely crunch. There is nothing complicated about making this bread and you don’t need any unusual ingredients.

  • Eggs
  • Almond Flour
  • Yoghurt
  • Seeds : Sunflower seeds, pumpkin seeds
  • Spices : Roasted cumin powder, red chili powder, garlic powder & Italian herbs

I make this kind of bread quite often at home because my husband is diabetic and likes to have an early breakfast. I am seriously not a morning person when it comes to preparing breakfast 😄 so I love making healthy breads and buns ahead of time. I can store them in the refrigerator for up to a week, which makes busy mornings much easier.

Ingredients

  • 2 Cup Soaked Red Lentil
  • 1 Cup Chopped Spinach
  • 2 Eggs
  • 1/2 Cup Almond Flour
  • 1/4 Cup Yoghurt
  • 1/4 Cup Sundried Tomato
  • 2 tbsp Sunflower Seeds
  • 2 tbsp Pumpkin Seeds
  • 1 tspn Italina Herb
  • 1 tspn Red Chilli Powder
  • 1 tspn Roasted Cumin Powder
  • 1 tspn Garlic Powder
  • 2 tbsp Olive Oil
  • 1 tspn Baking Powder
  • 1/2 tspn Salt

Instructions
 

  • In a blender add the soaked lentils, eggs and yogurt then blend until you get a smooth paste.
  • Now add olive oil, almond flour, all the dry spices, Italian herbs and baking powder, Mix everything well until fully combined.
  • Now add the sun-dried tomatoes and chopped spinach to the lentil batter and mix well. Finally add seeds and give everything one more good mix.
  • Pour the batter into a bread pan lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for about 50-55 minutes or until fully baked.
