Slow Cooking Will Make Chicken Soft & Juicy
This slow cooker pesto chicken is so delicious. You can enjoy it with rice, pasta, quinoa or even with roti. The ingredients are minimal chicken thighs, basil pesto, tomato pesto, onion and a few more simple items.
Chicken thighs can easily be replaced with chicken breast. If you want only the flavour of basil pesto, you can replace tomato pesto with sun-dried tomatoes or fresh cherry tomatoes as tomato really enhances the flavour of basil pesto.
This is a slow cooker recipe so because of slow cooking the chicken soaks up all the flavours and becomes very soft like cotton, it melts in your mouth.
In my recipes I prefer to sauté garlic, onion or a little spice first because it really enhances the flavour of the whole dish. If you are in a hurry and don’t want to sauté that’s okay but the taste will be different.

What if I don’t have tomato pesto?

- 6 Chicken Thigh(skinless)
- 1 Cup Green Peas
- 1 Sliced Onion
- 1 tbsp Crushed Garlic
- 1 tbsp Julien Ginger
- 3 tbsp Basil Pesto
- 2 tbsp Tomato Pesto
- 2 tbsp Yoghurt
- 3/4 Cup Chicken Stock
- 1 tbsp Vegetable Oil
- 1-2 tbsp Cooking Cream
- Basil Leaves
- Salt & Pepper
Instructions
- Sauté garlic for a minute then add sliced onion and sauté for 2 more minutes.
- Then add the chicken thighs and sauté on both sides until they slightly change colour.
- In cooker for sautéing took me around 7 minutes, you can also use frying pan.
- Then add rest of the ingredients except green peas, basil leaves and cooking cream.
- Slow cook for 2 hours and 30 minutes then open and add green peas, cooking cream and basil leaves.
- Cover and cook for another 10 minutes. Yes! it’s ready to serve with rice, quinoa or pasta.
