Ingredients

  • 900 gram Pumpkin
  • 200 gram Potato
  • 1 chopped Jalapeno
  • 6-7 Garlic pods
  • 1/2 Vegetable Bouillon
  • 800 ml water
  • 1/2 Ciabatta Bread torn into bite size pieces
  • 3 Tablspoon Chopped Parsley
  • 1 Tablspoon Dry Parmesan
  • 3 Tablespoon Extra Virgin Olive Oil

Instructions
 

  • Prepare the Vegetables: Roughly chop the pumpkin, peel and chop the potato.
  • Cook the Soup: In a pot, add the chopped pumpkin, potato, jalapeno, garlic pods, vegetable cube, and enough water to cover the ingredients. Cover the pot, bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the vegetables are soft.
  • Make the Croutons: While the soup simmers, preheat the oven to 180°C (350°F). In a bowl, toss the torn bread with olive oil, salt, and freshly ground black pepper. Place the bread on a baking sheet lined with baking paper and bake for 10-15 minutes, or until crisp and browned.
  • Finish the Croutons: Once the croutons are done, remove them from the oven. Toss the croutons with chopped parsley and grated parmesan in a bowl.
  • Blend the Soup: When the vegetables are fully cooked, remove the pot from heat. Use an immersion blender or transfer to a blender to purée the soup until smooth.
  • Add 2-3 tablespoon of olive oil and salt for taste
  • Serve: Ladle the soup into bowls and top with the Parmesan croutons for added crunch and flavor. Enjoy!
